Take a look at: http://www.goldpuma.com and refer to their dedicated server section. As an experienced webmaster I’m sure it would work for you and fulfill all your requirements. They have a really great offer & I have used them for over 3 yrs now, and have never had a single problem with them.

Either Mac OS X or Linux.
Mac OS X is good because it doesn’t freeze or crash as much as Windows or Linux.
It also has about 1/100 of the viruses that Windows has.
Yet Linux has a better uptime than Windows does, and it has fewer viruses than Mac OS X.
Linux is free, but it isn’t quite as good as Mac OS X.
